BBQ Jalapeno Cheddar Cornbread

Ingredients:

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 cup buttermilk
  • 1/2 cup unsalted butter, melted
  • 4 tablespoons Woo Pig BBQ She Calls Me Honey
  • 2 large eggs
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1/2 cup shredded cheddar cheese (optional)
  • 2 jalapenos (one diced and one sliced)

Instructions:

  1. Preheat your oven or smoker to 400°F (200°C). Grease an 8-inch square baking dish or a cast-iron skillet.

  2. In a large bowl, whisk together the cornmeal, flour, baking powder, baking soda, and Woo Pig BBQ She Calls Me Honey.

  3. In a separate bowl, whisk together the buttermilk, melted butter,  and eggs.

  4. Pour the wet ingredients into the dry ingredients and stir until just combined.

  5. Fold in the corn kernels, diced jalapeno, and shredded cheddar cheese.

  6. Pour the batter into the prepared baking dish or skillet.

  7. Bake in the preheated oven or smoker for 20-25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

  8. Allow the BBQ cornbread to cool in the dish for a few minutes before transferring it to a wire rack to cool completely.

  9. Once cooled, cut into squares or wedges and serve.
