Chipotle Lime Grilled Shrimp

Chipotle Lime Grilled Shrimp

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 2 teaspoons chipotle powder
  • 2 teaspoons honey
  • 2 tablespoons Woo Pig BBQ She Calls Me Hot Honey
  • Wooden skewers, soaked in water for 30 minutes
  • Cilantro chopped for garnish

  1. In a bowl, whisk together olive oil, lime juice, honey, minced garlic, and Woo Pig BBQ She Calls Me Hot Honey. This will be your marinade.

  2. Place the cleaned shrimp in a large resealable plastic bag and pour the marinade over them. Seal the bag and shake it to ensure the shrimp are well-coated. Marinate in the refrigerator for at least 30 minutes.

  3. Preheat your grill/smoker to medium-high heat.

  4. Thread the marinated shrimp onto the soaked wooden skewers.

  5. Grill the shrimp skewers for about 2-3 minutes per side or until they are opaque and cooked through. Be careful not to overcook as shrimp cook quickly.

  6. Optionally, baste the shrimp with any remaining marinade while grilling for extra flavor.

  7. Once done, remove the shrimp skewers from the grill and let them rest for a minute.

  8. Serve the chipotle lime grilled shrimp with additional lime wedges and chopped cilantro on top for garnish.

This recipe offers a perfect balance of smokiness from the chipotle, tanginess from lime, and a touch of sweetness from honey. It's a quick and flavorful option for a barbecue. Enjoy!
