Grilled Corn Salad

Ingredients:

  • 6 ears of corn, husked
  • 3 bell peppers diced (we do red, orange, green, and yellow)
  • 1/3 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 limes
  • 4 tablespoons Woo Pig BBQ Southern Charm All Purpose Seasoning
  • Cotija cheese, crumbled (optional)

Instructions:

  1. Preheat your grill to medium-high heat.

  2. Grill the corn and bell peppers on the preheated grill, turning occasionally until kernels and peppers are tender and have a nice char, about 8-10 minutes.

  3. Once the corn and peppers are done, allow them to cool slightly, then cut the kernels off the cobs and dice the peppers.

  4. In a large bowl, combine the grilled corn kernels, diced bell peppers, finely chopped red onion, and chopped cilantro.

  5. In a small bowl, whisk together lime juice, olive oil, and Woo Pig BBQ Southern Charm All Purpose Seasoning.

  6. Pour the dressing over the corn mixture and toss everything gently to combine.

  7. If desired, sprinkle crumbled Cotija cheese on top.

  8. Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.

  9. Serve the grilled corn salad alongside your favorite BBQ dishes.
