Ingredients:
- Chicken wings (4 lbs)
- 1/4 cup olive oil
- Woo Pig BBQ Southern Charm All Purpose
- Woo Pig BBQ Backroads Brisket
- Wood chunks for smoking (hickory or applewood work well)
Instructions:

Prepare the Wings:
- Remove wings from the package and trim away excess skin. Clean wings free of excess feathers, etc.
- Pat each wing dry with some paper towels and place wings in a large bowl or resealable bag.
- Lightly Drizzle olive oil over the wings and toss wings to ensure a very light coating is on each wing.
- Place wings out on a sheet pan with wire rack and season each wing with your favorite seasonings. We usually do three different flavors using our favorite Woo Pig BBQ ribs.
- Place in the fridge uncovered and let them soak in the seasoning for 4 hours (overnight is preferred)

Prepare the Smoker:
- Preheat your smoker to 275°F. Apple wood and hickory are our favorites for wings.

Smoke the Wings:
- Remove the wings from the fridge and place them on the smoker grates.

Slow Smoke:
- Smoke the wings for 2 hours or until they reach an internal temperature of 165°F. Adjust the smoker temperature as needed to maintain a steady smoke.

Crisp the Skin (Optional):
- If you prefer crispier skin, you can transfer the smoked wings to a preheated grill or oven (broiler) for 5-10 minutes, turning occasionally.

Serve and Enjoy:
- Once done, serve the smoked wings hot. You can pair them with your favorite dipping sauces.
